Appam (Vellayappam) Kerala Style
Ingredients
1. Dosa rice or idli rice - 1 cup
2. Desiccated coconut or grated coconut - 3tbsp
3. Sugar - 1tbsp
4. Boiled rice - 2tbsp
5. Dry Yeast - 1/4tsp
6. Salt - to taste
7. Water
Method
1. Wash rice thoroughly 3-4 times.
2. Soak rice for minimum 3 to 4 hours and drain it.
3. Take a large mixi jar and transfer the rice with 2 to 7 ingredients, add required amount of water and grind to a smooth flowing batter.
4. Pour the batter into a large bowl. Cover and keep aside for fermenting for 6-8 hours, depending on the temperature conditions.
5. Heat appam chatti or dosa pan over medium flame and pour a ladle of batter and spread gently.
6. Once the holes appear on the appam, turn to low flame. Cover and cook for 2 minutes.
7. Finally, carefully remove the appam from the pan and serve with egg curry or chicken curry etc...
