Carrot and Egg Thoran
Ingredients
1. Carrots - 2
2. Onion - 1
3. Green chillies - 2
4. Ginger - 1/2 tsp
5. Turmeric powder - 1/4 tsp
6. Chilli powder - 1/2 tsp
7. Mustard - 1 tbs
8. Salt - to taste
9. Egg - 2
10. Oil - 2tbs
11. Water - 1/4 cup
Method
1. Finely chop 1-4 ingredients and keep it aside.
2. Heat oil in a pan and splutter mustard seeds.
3. Add ginger, onion, green chillies.
4. When onion becomes translucent add carrot, turmeric powder, chilli powder, salt and water. Cook it on medium flame.
5. When carrot turn soft and the water is dried, add egg one by one and scramble.
6. When the Eggs are well cooked and dried up, turn off the flame.
Enjoy your easy and tasty carrot egg thoran. Serve with rice or chappathi.
