Boondi Laddo (Kerala Backery Laddu)




Ingredients 

1. Besan flour - 1 cup
2. Turmeric powder - 1/2 tsp
3. Sugar - 1/2 cup
4. Ghee - 1 tbs
5. Salt - to taste
6. Oil - for frying
7. Cashew nuts
8. Water

Method

1. Take a bowl, add beasan flour, turmeric powder, salt and mix it well.
2. Add water to make smooth batter (consistency of the batter is important).
3. Heat oil in a Kadai, maintain medium flame.
4. Pour some batter on the boondi ladle and gently spread the batter continuously, allow droplets of batter to fall through the pores of ladle into the hot oil.
5. Fry till golden brown. Then move from the oil and keep it in a strainer (do not fry it too crisp).
6. Continue to make more boondi in batches until all the batter finishes.
7. Take a mixer grinder jar, add some boondi and just crush it (this step is optional).
8. Then mix the crushed and non-crushed boondi (obviously this step is not required if choose to skip step 7).
8. Then take a saucepan, add  sugar and water to boil until 1 string consistency. Turn off the flame.
9. Then pour the hot sugar syrup and ghee. Nicely mix it.
10. After 15 mins spread oil or ghee on your palm and make small balls out of the boondi mix.
11. Finally fix a half cashew nut on the laddu.

  Your Yummy Laddo is ready.. Enjoy!
