Pearl Spot / Karimeen Fry
INGREDIENTS
Marination
1. Karimeen / Pearl spot - 4
2. Garlic - 6
3. Ginger - 1 medium
4. Shallots - 5
5. Turmeric powder - 1/2 tsp
6. Chilli powder - 1 tsp
7. Kashmiri chilli powder - 3 tsp
8. Fennel seed powder - 1/4 tsp
9. Curry leaves - 5
10. Vinegar - 1 tsp
11. Salt - to taste
12. Water - 2 tsp
For Frying
1. Coconut Oil - for frying
2. Curry leaves
Methods
1. Firstly, clean and wash the fish, then make slits on both sides.
2. Take a small mixture jar, add 2 - 12 ingredients (for marination) and grind it well.
3. After grinding thick masala paste gently apply on both sides of the fish. Then keep fish in a box and store in the refrigerator for at least 30 minutes.
4. After 30 minutes, heat a fry pan and pour Coconut oil for frying.
5. When the oil is heat, place the fish carefully and shallow fry in the medium flame.
6. Add some curry leaves, once the first side of the fish turns dark golden brown, gently flip over and cook the other side.
7. When both sides of the fish are cooked, transfer the fish to a serving plate.
