Easy Chicken Mandi



Ingredients

For Marination

1. Chicken - 4 large piece
2. Lemon - 1/2 lemon
3. Cumin seed powder - 1 1/2 tsp
4. Pepper powder - 1 tsp
5. Whole pepper - 1 tsp
6. Crushed green chilli - 1 1/2 tsp
7. Coriander leaf - hand full
8. Mint leaf - half hand
9. Chicken stock cubes - 2
10. Salt - to taste
11. Food colour - (optional) or Kashmi red chilli powder - 1 tbs.
12. sunflower oil - 1/2 cup

For Mandi rice

12. Basmati Rice - 2 1/2 cup
13. Bay leaf - 1
14. Cadmium - 2
15 Cloves - 5
16. Cinnamon - a small piece
17. Salt - to taste
18. Green chillies - 6 - 8
19. Charcoal - Small piece
20. Oil 

Methods

1. Take a full chicken, cut into 4 pieces. Wash chicken thoroughly and drain the excess water from the chicken.
2. Transfer the chicken into a cooking pot and poke holes using a fork. Then add 2 - 8 ingredients. 
3. Add chicken stock cubes, mash it with hand and add some salt. Chicken stock cubes have salt already, add salt considering that.
4. Add red food colour (it's completely optional). If don't use food colour, you can use 1 tbs Kashmiri chilli powder.
5. Keep a side marinated chicken for at least 1 hour (otherwise keep in the fridge overnight).
6. Take 2 1/2 cup Basmati rice, washed and soaked for atleast 20 minutes.
7. After marination, pour oil on top of the chicken, then close the lid and cook it in medium flame.
8. when one side of the chicken is cooked, flip it and cook the as well.
9. When the chicken is fried on both sides, then take excess oil and transfer it to a bowl. Then keep that oil aside (we will need it the later stage).
10. Take some water in the pot, add 12 - 17 ingredients and 1 tsp oil.
11. When the water is boiled, add soaked and drained the rice.
12. When the rice is cooked, drained the water and add the half portion of fluffed up rice over the fried chicken.
13. Pour some chicken fried oil (from step 9) over the rice, then add remaining rice. 
14. Gently press the rice using back of the spatula. Add remaining chicken fried oil.
15. Put some chillies inside the rice and keep a small bowl in the middle.
16. Transfer a small piece burning charcoal to the bowl and pour some oil on the charcoal.
17. When the smoke starts coming, close the lid fast. 
18. Heat a large dosa pan, then place mandi pot on the dosa pan.
19. Maintain low flame and heat it for around 20 minutes.
20. Turn off the flame after 20 minutes, then open the lid and remove the charcoal.
21. Gently transfer the rice to a bowl, then transfer the chicken also to a another plate.
22. Mix the remaining rice with previous rice ( from step 21)
23. Take a serving plate, gently transfer the rice and place the mandi chicken on top of the rice.
