Banana Cake (Kai pola)



Ingredients

1. Banana (Nendran) - 6
2. Egg - 7 
3. Sugar - 10 tbs
4. Maida flour - 2 1/2 tbs
5. Ghee 
6. Cashew nuts 

Methods

1. Firstly, peel the bananas and cut into small pieces.
2. Heat 2 tsp ghee in a pan, add cashew nuts.
3. Fry the cashews nuts till golden brown. Transfer the bowl and keep it aside.
4. To the same pan in the remaining ghee, add small pieces of banana and saute it well.
5. When the banana has turned golden brown colour, turn of the flame and keep it aside.
6. Take a large mixer jar, add eggs, sugar and maida flour. Blend into a smooth mixture.
7. Transfer egg mixture to a bowl, add roasted banana and mix it well.
8. Heat a dosa pan, then place the sauce pan on top of the dosa pan.
9. spread some ghee to the sauce and grease the side also.
10. Then pour egg banana mixture to the pan and place fried cashew nuts top on the mixture.
11. Cover with lid and keep it in low flame for around 45 to 50 minutes. 
(After 45 minutes check by inserting a tooth pick, if it comes out clean, it is nicely cooked)
12. Heat a pan and spread some ghee. Then flip the banana cake, cook it on the other side. After 3 minutes, turn off the flame. 
14. Transfer the Banana cake into a plate and and serve it.
