Drumstick Stir Fry (Muringakka Thoran)
Ingredients
Drumsticks – 350 gm
Onion – 1 medium (finely chopped)
Green chillies– 2
Cumin seeds – ¼ tsp
Turmeric powder – ¾ tsp (divided)
Chilli powder – ½ tsp
Grated coconut – 6 tbsp
Mustard seeds – 1 tsp
Curry leaves – a few
Coconut oil – 3 tsp (divided)
Salt – to taste
Water – ½ cup
Method
First, peel the drumstick skin, cut them into small pieces, and wash well. Then cut each piece in half.
Transfer the drumsticks to a saucepan. Add ½ tsp turmeric powder, salt, and ½ cup of water. Mix well, cover with a lid, and cook until the drumsticks are tender.
In another pan, heat 2 tsp of coconut oil. Add mustard seeds. Once they splutter, add curry leaves and the finely chopped onions. Sauté well.
Meanwhile, in a small mixer jar, add grated coconut, cumin seeds, ¼ tsp turmeric powder, and green chillies. Crush the mixture lightly (do not grind to a paste). Set aside.
When the onions turn translucent, add chilli powder and sauté on low flame. Then add the crushed coconut mixture and sauté for a few minutes.
Add the cooked drumsticks and mix well. Cook for a few more minutes, allowing the flavors to combine. Adjust salt if needed.
Keep stirring gently until any remaining water evaporates and the coconut mixture coats the drumsticks well.
Finally, add 1 tsp coconut oil and a few curry leaves. Turn off the flame.
