Drumstick Stir Fry (Muringakka Thoran)



Ingredients

  1. Drumsticks – 350 gm

  2. Onion – 1 medium (finely chopped)

  3. Green chillies– 2

  4. Cumin seeds – ¼ tsp

  5. Turmeric powder – ¾ tsp (divided)

  6. Chilli powder – ½ tsp

  7. Grated coconut – 6 tbsp

  8. Mustard seeds – 1 tsp

  9. Curry leaves – a few

  10. Coconut oil – 3 tsp (divided)

  11. Salt – to taste

  12. Water – ½ cup


Method

  1. First, peel the drumstick skin, cut them into small pieces, and wash well. Then cut each piece in half.

  2. Transfer the drumsticks to a saucepan. Add ½ tsp turmeric powder, salt, and ½ cup of water. Mix well, cover with a lid, and cook until the drumsticks are tender.

  3. In another pan, heat 2 tsp of coconut oil. Add mustard seeds. Once they splutter, add curry leaves and the finely chopped onions. Sauté well.

  4. Meanwhile, in a small mixer jar, add grated coconut, cumin seeds, ¼ tsp turmeric powder, and green chillies. Crush the mixture lightly (do not grind to a paste). Set aside.

  5. When the onions turn translucent, add chilli powder and sauté on low flame. Then add the crushed coconut mixture and sauté for a few minutes.

  6. Add the cooked drumsticks and mix well. Cook for a few more minutes, allowing the flavors to combine. Adjust salt if needed.

  7. Keep stirring gently until any remaining water evaporates and the coconut mixture coats the drumsticks well.

  8. Finally, add 1 tsp coconut oil and a few curry leaves. Turn off the flame.
