Vendakka Mezhukkupuratti (Okra / Ladies Finger Stir Fry)
Ingredients
Ladies finger (okra) – 250 g
Small onions – 12 (crushed)
Chilli flakes – 1 tsp
Chilli powder – ½ tsp
Curry leaves – 2 sprigs
Salt – to taste
Coconut oil – 2 tbsp
Method
Wash the ladies finger thoroughly. Wipe them dry with a cloth or paper towel (removing moisture helps prevent sliminess). Cut into small pieces.
Heat a pan and add coconut oil. Once hot, add the crushed small onions, chilli flakes, and curry leaves. Sauté well until the onions become translucent.
Add chilli powder and sauté for about 2 minutes, or until the raw smell disappears.
Add the chopped ladies finger and salt. Mix gently to coat the ladies finger with the masala.
Cook uncovered on medium heat, stirring occasionally to avoid sticking and ensure even cooking.
Continue to cook until the ladies finger is tender and slightly crispy, and the masala coats the pieces well.
Your Vendakka Mezhukkupuratti is ready! Serve hot with steamed rice and enjoy!
